Because unless it's going to be a longstanding anime favorite for decades to come, hype for an anime builds during it's season and only lasts until a few days after it finishes airing. Violet Evergarden had a season length of basically one day, and wasn't really advertised at all. Netflix paid for the show simply to pad out the amount of content they have, but the anime community doesn't overlap basically at all with Netflix viewership. It's a shame too, I really enjoyed the series a bunch.

First episode or two were really boring as it was all setup for a concept that in itself it pretty slow. The show is just her meeting people with their own versions of love and grief as she understands how emotions work, and "melodramatic" is most definitely an accurate description. None of the storylines are really remotely surprising in what happen and are easily predicatble, but their execution is pretty solid in my opinion. It'd put it close in spirit to something like Clannad, where the anime is clearly doing what it can just to make you cry a lot, and your enjoyment of it depends entirely on whether you let it happen or not. Some people are definitely going to absolutely fucking hate this show, some people are going to like it a lot.

But some studios just want to put out something they find pretty, some others will go the inverse way and make something that's more minimalistic in animation but has an elaborate story, like Noein.

Prettymuch this. With Kyoani's work it usually falls to the seiyuu to carry the show in question. The studio takes decent, mellow, or exciting content and just wrings the engagement out of it while making it all very beautiful. To this day, the only work of theirs I finished is Kanon, and that's because more than half the work was done by the seiyuu, who seriously pulled the weight with the scripts they were given. That and Haruhi, which was done out of dogged determination (spoilers: Boring as all fuck). Everything else they've done just peters out long before the conclusion. Even Lucky Star, and that was supposed to be nothing but gags.
