That's not cheese, that's cheese with all its crust peeled out. While you might think this is trivial, it's a combination of presenting a loaf of bread without the crust, leaving the soft interior to go to shit in record time, and serving wine before letting it age beyond a week first. The best cheese is the stuff that is carefully aged over more than a year, letting it attain peak taste. This shit can barely be above rubber taste-wise.

I know all about federweisser, or, as we call it in countries that know their shit about wine, vin bourru. It's tasty but unstable as fuck, impossible to sell outside of a scope of a few weeks. And it isn't so much a quality product as it is selling a mix of raisin juice and yeast before it exits the sweet spot where it's not disgusting to consume. So I really wouldn't take it as fine craftsmanship when it's the poster child of a happy accident.
