The Rape King might otherwise be a reasonable bet for a "side story" volume after a two-parter arc, except the war with the Theocracy means it can't be done in isolation, and there's too much that has to come together. The Theocracy is Nazarick's main remaining opposition, such as anything can be called that, and it will need a couple volumes of its own. I doubt we'll just straight from a two-parter into a huge plot-heavy arc.
The Dragon Kingdom is a possibility, but we just had two volumes in a row of demihuman invasion and I'd prefer something different.
The Kingdom has had enough attention that I could reasonably see a one-volume arc for it to fall under Nazarick control. I'd say right now that's my guess for the next volume, assuming it isn't a completely un-foreshadowed sidestory.

In my opinion either the subjugation of the kingdom or the dragon kingdom is gonna be next. The events of this volume will be a catalyst for both whatever is gonna happen to the kingdom. Between the fact that Ainz (and not Momon) killed the demon emperor (largely for fun) will make people shit their pants, the fact that he has subjected the demi humans in the Abelion hills means the Kingdom is truly fucked as not only they lost E-Rantel trade hub but they're now completely surrounded by the Sorcerous kingdom forces. There is bound to be a bunch of idiots wanting Ainz dead. Hell several months passed with him "dead" since he was having the fingers spread the rumor one can assume his dead had more to do with the kingdom than gaining worshipers in the Holy kingdom.
So yeah I think something happened in the Kingdom while Neia and CZ were playing Metal Gear and reconquering cities.
And the news of him being not dead and having beaten the demon emperor for fun will set the stage for the dragon kingdom asking for help later on.
The elves being at war with the Theocracy and the Theocracy is being obviously saved for last makes me think we're not gonna go there soon.

Platinum dragon himself is not actually a big deal, and openly questions his friend when she says he's the strongest being in the world, after having fought Shalltear.
No one so far has been revealed to be anything like a true threat. Shalltear's mind control by the Downfall of Castle and Country has still been the biggest threat to date, and even then she could have just been overpowered by multiple floor guardians easily, Ainz was just being cautious because he thought players might be involved.

The whole reason why Ainz won against Shalltear is because Shalltear is woefully inexperienced in actual PvP. That's why Ainz is putting so much effort in having the guardians learn. Think of it this way: every Nazarick NPC is the equivalent of a good player having bought a max lvl character and having read up a guide on how to play the different jobs, but not having any meaningful experience past that point.
Or to put it into a more meaningful context: you're a PvP dawg an have been going at it in UO and DAoC for years. You finally decide to give WoW a try after it comes out and buy a raid geared lvl 60 Warrior. You read up on how Warriors play, kill some mobs to get a feeling for the game and then you join a battleground. Where everybody shits all over you because you have no fucking clue how to play.
Ainz understands this concept very well, that's why he had the guardians fight the giant tree as a team, that's why he had Hamsuke fight the dickhead worker, that's why he had the Doppel-Pleiades and the summoned demon fight him "for real". Experience is a huge factor and Ainz "the king of best out of 3 PvP duels" lives by that.

The mayor, along with all the other bureaucrats and officials who had previously been responsible for managing the city, fled to other lands controlled by the Re-Estize Kingdom after Nazarick took control of the city. Most likely as mayor of a fairly large fortress city he would have connections in the capital with merchants, bureaucrats, hedge nobles and the like. He had a reasonably good head on his should so he likely found employment somewhere in the capital.
