I had the same problem for a while. My solution was to beat the game first. I always have completionist tendencies the first playthrough, but it's better to finish the game first so you know roughly what is worth it and what isn't based on what the game gives you as you progress through the main story.

I thought I was “sick of games” until I decided to branch out a little bit and try some games I normally would never have even thought to touch, and I’ve found some of my favorite games ever as a result. Sure, most games won’t be winners, but it only takes a success or two to keep you happily occupied for a long time coming.
Real life stress can make it real hard to enjoy shit though, so consider if that’s something you need to resolve first.

People underestimate the power of either having the physical game on the shelf reminding you you haven't beaten it. Or the desire to "get your money's worth" that comes with purchasing both physical and/or digital releases.

Gaming is a great hobby, but it shouldn't be your only hobby, just as nothing else should be your only hobby. If you only have one hobby, it starts feeling like work and you get burned out, just like you do grinding away at a real job. Diversify your interests.

Yeah, I used to have that problem. I fixed it by forcing myself to follow through. I only have an hour or two to play a game a day tops, so if I pick up a 40-hour game, it can take more than a month for me to finish it. If I don't force myself to do what you suggested, I end up never finishing anything. It's more satisfying even when a game is more of a drag at the end than in the first half, because you actually finished it and can move on to something fresh. I was getting burned out on video games at one point, and it was just because I'd pick up and put 5 to 10 hours into every game (because that would take me roughly a week) and then drop it forever instead of polishing it off. Left me feeling unaccomplished and demotivated.
Finish what you start. You'll feel way better about what you're doing.

Depending on the game, you might need to just stop focusing on the mathematics aspect. For example, I started choosing my characters' gear and equipment based on aesthetic rather than stats. This simple move drastically improved my enjoyment of several RPGs. It also encouraged more consumable use and ended up organicaly increasing difficulty/game complexity in other ways. Alternatively there's games designed around the player doing math and minmaxing the shit out of everything, like Starsector, which I also love.
