Your referencing Theros,Amonkhet, innstrad, ixalan, and yes three of those are "theme park worlds", but innstrad was a fucking banger.
In Innastrad all traders have silver on them to prove they're not werewolfs, but how do towns know genuine silver from fake stuff? They all have a young captured werewolf they keep in a cage that they hold the silver too in order to check. Racism is rampant because you have to be a paranoid to survive as a human, because everything else wants you dead or subservient. The entire magic underlying the plane has an inherent "wrongness" to it, like everything is just a bit off compared to everything else. shit's fantastic.
Should also note that all of the planes mentioned came from the "bronze age" were wizards starting losing there shit, when most of what I'm interested is the silver age here.
I don't know, "Theme park world" just seems harsh when some of these places have books written on them, hundreds of art pieces, and some pretty novel concepts. I always viewed magic cards as sort of the building blocks of settings. Like you don't get a full picture, but just a glimpse and some lore to form your own vision of the plane, like a book.
