I've beaten every major Gradius game but IV and V, and I've beaten Parodius Da!. The last few stages in Parodius games get absolutely brutal in a way not encountered in Gradius games as their adaptive difficulty systems have been building up over the course of the whole game.

Majority of Psikyo's shmups have been ported, all of them are pretty great especially Zero Gunner 2, Gunbird, Gunbird 2 and Dragon Blaze
Pulstar, Last Restort, the Aero Fighters series, Blazing Star, Ghost Pilots and Alpha Mission II via the ACA Neo Geo ports (Still fucking waiting for Twinkle Star Sprites. Hurry the fuck up Hamster)
Psyvariar Delta is coming to next month which is an enhance remake of Psyvariar

If Metal Slug does count, I am trying to 1CC MS4, I picked it because I thought it was the hardest and also less popular one, actually it's really easy (and shitty) if it wasn't because the final boss has a literal 50/50 death laser that can spawn several times i'd have a complete run already, but when I do 1CC with no deaths Ill be sure to brag around here. I hope default difficulty (4) is considered fair enough.

I find the level design much more frustrating in 4 than any of its bosses, aside from the mission 5 boss which can be pretty cheap. I actually really like 4's set of final boss(es) and wish the rest of the game's bosses were on the same level. The lasers that come from left and right and you have to jump or crouch under.
Sometimes one of those sets will have one fake laser that will not fire, followed by a laser that shoots high. You may be tricked into jumping by the fake laser, thinking it will shoot low, but it will not shoot and instead the next one will fire and kill you while jumping. The only way to spot them is by paying close attention, the fake laser is always on the opposite side of the one that shoots high, so if you see the lasers in that order, (one that seems it will shoot low and the next one is on the other side of the screen) then you must not jump.

Oh yeah, I know what you're talking about. The good news is that you don't really need to deal with the final boss form long at all unless you're playing for score. The satellites in the boss's second form can be milked infinitely for bombs, which you can then spam on the final form to destroy it very quickly. The final form has 640 health so 64 bombs is all you need.
I can't recommend against playing Metal Slug 4 for score strongly enough though, all but one boss features some form of infinite milking (until your timer runs out).

Yep, not sure what the release date is going to be, but it's being made. It's not super different as far as gameplay, but you do get some nice new things like being able to stream any audio source on your computer to the game, musically generated reward ships, and bosses that take up a good half of the entire screen and do this really cool fanning out motion when they appear.

I can only enjoy playing shmups on mobile with the touch screen. Traditional controls are godawful. You're stuck between them being overly sensitive causing you to move too far and having to tap the movement at a retardedly fast pace to micro adjustment your position. Basically the problem is having to return to neutral over and over. Touch controls are comfy as fuck, just a shame they undermine the balance in the game's design. I bought an iPad 4 just to play CAVE shmups, they're gone from Android and are no longer updated for later Android/iOS devices, so defunct. Just a shame I bought iPad 4 and not 5, because I eventually found out Aka to Blue is not compatible with 4. The game sucks on my tiny Android phone screen. And that is a shmup with a balance designed with touch movement in mind.
