Oh man, this could take hours but just for reference a lot of the things that make MGSV's gameplay the best in the series are things you don't notice.
>For starters the camera is your friend
Gone all the days of fixed camera and claustrophobic obscured angles. The HUD is minimal, this coupled with Snake's relative position to the camera's viewpoint ensure that visibility is NEVER compromised, even when you're back against a wall or in an awkward position (Snake becomes transparent). It also helps with immersion.
>Easy of access to weapons and items even in controllers
Whether or not you're armed to the teeth, accessing your inventory is 1-2 button presses away, this is great specially since the game no longer pauses when you're accessing your items. It cuts down having to cycle through the inventory while at the same time giving you the option to carry up to 20 things. It means you gotta think on your feet, know where you put your tools and be quick about it. Again it also helps with immersion.
>Codec coms are kept to a minimum and are delivered on the go
This is a double edge sword, for one I liked some of the codec exchanges but I know they broke the pacing and were mostly comprised exposition dumps. The game loses a bit of personality but it does so for the sake of gameplay which is a plus in my book. It also helps with immersion. That said, the way some of them are implemented and the fact that Snake never says anything leaves a lot to be desired.

What's more to say about it, he's as smooth as butter and the amount of movement options increase the many ways you can approach any situation. HOWEVER he's a bit too fast especially considering that the guards sidelines are a bit forgiving and they're somewhat slow to react.
>Proper streamlining of controllers without sacrificing options or reducing complexity
This is related to the points above, the way the controls are set up, whether you play with a controller or with M&K is intuitive, quick to pick up and hard to screw up. It's clear that a lot of work was put in into making the controls for this game just right and that's saying something when you consider the amount of things you can do. When you're in the zone, your hands melt and you become one with Snake
I could go on but those are some of the main points to consider. Although none of this is to say that the gameplay by itself doesn't have issues
