There's Empire/Napoleon Total War and Shogun 2 if you want to have fun with old weapons. If it's the artillery you like, then go for Napoleon, since artillery rules the day in Napoleon. Hell 90% of your army comp is dedicated to either killing the enemy's artillery, or protecting your own. Just know that Empire and Napoleon tend to have less than great AI.
>AI is forming their line
>blow the fuck out of a cavalry unit with your godly 12-lb. cannon
>AI wastes time reforming their lines instead of marching towards you, letting you bombard them completely for free forever because ayy lmao arty has infinite ammo
>AI infantry has an odd habit of blobbing their troops into this weird X-shaped mass that turns your Total War game into Artillery Bowling simulator. In worse cases, you can cause three whole units to rout in a single cannonball
>You literally never need to move from your starting position. If you hold perfectly still, the enemy will eventually come to you, but they will wait very patiently before that happens, allowing you to shell the faggots completely for free.
