The humor of Conker's is really just a product of it's time, The whole selling point is that it's a game about a cute cartoon squirrel, but it's contrasted by all the sex swearing, booze, adult themes, crude humor, and movie parodies.
This kind of comedy isn't all that new or shocking now a days, but at the time it was edgy as fuck.
The game had an M rating and a warring on the box, but it was fated to be a game that was mistakenly bought by parents, thinking it was harmless, so then kids would play something that was clearly not appropriate for them. That's what made Conker so cool. it felt like you were breaking the rules, your parents clearly wouldn't want you playing such a thing yet they're the ones who bought it for you.

Comedy in games has been a bit of a dead art since adventure games, and part of that is because the writers can't really rely on correct timing in more action oriented games in order to properly set up the joke. The comedy bits are usually relegated either to cheesy one-liners or scripted cutscenes.
It worked in adventure games, because everything was scripted and the only agency the player really had was to walk around and click on stuff. Once the right dialogue choice/item combination/action was chosen - the game would take over and animate the effects of the actions outside of the player's control - which put the control, and timing, entirely in the developer's hands.

A lack of inspiration, maybe? I get the feeling that since Postal 3 wasn't RWS's idea in the first place, they weren't sure what to do with the writing so they just lazily rehashed jokes from Postal 2. It could also be that they were so fed up with the Ruskies developing the game that they simply stopped giving a shit. I think the big difference between Postal 3 and Paradise Lost is that Paradise Lost was something RWS really wanted to do, rather than something they felt obligated to do. It was easier for them to come up with good jokes and new ideas, which is probably the reason it went in such a different direction from all the previous games too.

I liked how Portal 1 handled their humor. The situation and environments felt dire and serious, but the humor was smart and subtle, not unlike trying to figure out if you are going crazy or not.
Portal 2 on the other hand went balls deep into "le wacky science" humor. No more subtlety or quiet moments, just constant in-your-face bullshit that doesn't give the viewer time to appreciate the jokes. Granted, it came around at the height of this annoying humor, but god damn did I fucking hate what they turned Portal into. They turned a series about dark humor into an episode of Big Bang Theory.

What humorous moments does Portal 1 have, exactly? I don't remember a single thing that could be seen as funny in that game. At least, not without you yourself being the kind of person that finds those things funny.
IIRC, there's a part where GLaDOS tries to tell you something important regarding health and safety or something but then her voice glitches out. I guess that could be seen as funny if that's your sense of humour (a kind of cynical humour) but I would definitely take that as something more serious i.e. I'd take it as a serious attempt to establish a dark tone.
Someone explain Portal 1's humour to me. As I said, it seems to me less that Portal 1 was funny and more that you found humour in things that weren't really intended to be humorous nor intended to have a possible humorous interpretation.

They're basically white niggers at this point. It used to just mean provincial/rural folk who weren't as educated, "cultured", and cosmopolitan as city dwellers - but with the advent of "Redneck Culture" it's become less of a perjorative against rustic folk and more of a synonym for white trash - people who's only aim in life is to proudly and defiantly survive from day to day in the most base manner possible with no ambition or aspirations to better themselves or their situation.
