Probably because the average customer isn't apt to find them relatable. I mean, Sim Ant did find a niche, but usually if there's a focus to some degree on arthropods, it's either for the player to fight/exterminate, or catch and train to fight other shit (ala Pokemon or Jade Cocoon).
A few others come to mind though. There's Spider for the PS1, but that's got a background of a guy whose mind got transferred into a cybernetic spider, and thus you're play a human controlling a spider's cyborg body. Also Deadly Creatures, but that only has two playable characters and apparently follows a story about some dickwad humans that the animals are inadvertently near to for the duration of the game whilst pitting the animals against each other.
