I would argue that "mascot kart game" IS a staple of Nintendo's and their own original idea. Then again, it's not like they own a copyright on "spin off with characters from a main series". Plus, what Nintendo made original, even more than inventing the Kart formula, was the creation of the Kart Battle formula. That one is always a carbon copy of the SNES game, no matter which series implemented it.
Also calling it lazy rehash is also just as unfair, as the core mechanics of the two titles (or rather, CTR, the only good one in its franchise, and all the other Mario Kart games) are completely different. Most Mario Kart rely mostly on item usage/luck, one-time sprints while drifting and kart/player character selection, whereas CTR's main feature is the ability to jump on virtually anything to gain extra speed, multiple boosts during a single drift and precision timing in using the items. For instance, while you can always bounce back from last in CTR but can never really take on someone who's a full minute ahead of you, Mario Kart comebacks happen only when and if the game lets you. Even worse, getting thrown off the first place is incredibly easy in any given Mario Kart title. Again, in 64 and Super Circuit this was mitigated by the fact that the Blue Shell hit all players in front of you as opposed to just the top dog, while Double Dash introduced plenty of special items and the ability to hold two at once, which could sometimes help you prevent a barrage of shit coming your way when you're first place, but all the other titles you could practically stay well within the last places and only ever begin your actual racing during the last lap.

I've played that nu-Crash kart game that let you combine carts, it's ungodly levels of bad. Like, think GTA4 driving physics, characters never shut up and everything looks awful.
