Sanwa makes decent fight sticks. MadCatz just has the sense to use their parts. Everything on their sticks that's actually produced by MadCatz is flimsy, easily broken, and doesn't work right half the time.

After coming down with an extremely rare bout of competency, MadCatz hired someone from the fighting game community to design arcade sticks for them, and sourced the parts from Sanwa. OP I wish I could help but I have no idea if you can actually buy motherboards for the switch and I doubt there's a cheap alternative for a head start on it.

Best stick I ever owned is a MadCatz X360 SFIV TE. They're still used by the pros in the FGC.

Though of course it is the rare exception to the rule.

I can recommend Hori sticks though, they've always been solid for me but I haven't bought a new stick since the TE I mentioned because it's that good.

Find a decent Hori for your platform of choice and make sure it uses Sanwa or Happ parts (Happ is stiffer than Sanwa).

Of the two main manufacturers I've dealt with Sanwa is the more Japanese (ball tops) and Happ is more common in the US (elongated bat tops). The MadCatz SFIV TE uses Sanwa parts.

I'd say if you were going to get started with fightan, go for a Hori stick built from Sanwa parts.

Yes, the original SFIV and the second release Black TEs are rare as fucking hen's teeth, and were almost as soon as they came out, but there have been other releases since. There's an SFV stick if you don't mind hardware smeared with that turd's livery.

Honestly a fun option (if you've half decent DIY skills) is to make your own. Source the stick and buttons, get a controller PCB, wire them up and stick them in a box.

This thread has made me want to get my stick out of the cupboard and play some old fightan just for fun, but then I will remember SFV and how shit it is and stop.

Hopefully Sagat will at least be fun when he comes out, and the game might not be complete shit at the end of season 3.
