In Bloodborne, you probably assumed your blood echoes got transferred to the enemy closest to where you died and only remained on the ground if there wasn't anyone around or in case of a boss. Well, that's wrong. Your echoes always drop on the ground, but if an enemy gets close to it, they absorb it.
You can test this by dying close to an enemy, checking he has your echoes, quitting your game and reloading. You will see your echoes on the ground and you will see the enemy pick them up.
