-Only pick a few factions to join, and don't try to do everything on one character. The nice thing about Morrowind is that because the number of factions can't be counted on one hand like Oblivion or Skyrim, there's more opportunity to actually fucking roleplay, and have actual replayability; your experience can dramatically vary from character to character.
-If you're unsure of whether to go unarmored, light, medium or heavy for armor, pick heavy or light. Light is the best for looting, Heavy is the best for not getting wrecked by more dangerous stuff. Unarmored is best left for when you're more knowledgeable about the game, and Medium is… well… it weighs more than Light, but provides less defense than Heavy. Makes it kinda pointless in my opinion.
-If you can't decide on a weapon specialization, Short Blade & Long Blade are the standouts. Both have a steady progression and lots of options, as well as most of the top-tier enchanted weapons. Axe is a decent pick as well. Spear and Unarmed just kinda suck. There just aren't many cool enchanted spears outside of Hircine's Spear, so you'll basically have to enchant one yourself to have a good one. That said, Daedric Spear + Paralyze + Absorb Health = Funtimes.
-Alchemy & Enchant are super broken in ES3. The latter requires an enormous investment of time, but you can create some truly insane equips. Example: Exquisite Ring with Absorb Health 20pts x 10secs. Former is pretty exploitable as well. Example: Make a potion that fortifies your intelligence, drink it, then while under the influence of the first, make another. Alchemy's governing stat is Intelligence, so it can ramp up quick.
