Being able to more easily create head-canons about him doesn't make him more interesting. In fact, it makes him less so. "Universal" is almost the straight definition of bland, generic, and uninteresting. When he's a blank slate, there's less to work with. There's less to learn about him. There's less to like about him. Something as trivial as age is still something. And, even if an explicit number wasn't assigned to him, there's still an obvious range he has to fall in. Anyone who legitimately thought he was middled-aged wasn't creating some legitimate, personal interpretation of the character. They were just being a retard with poor observation skills.
