Lego's stupidly overpriced too. When I was a kid, I got a giant tub of used Legos for like $10, and I could make whatever I wanted with it. Kids can already design and build their own stuff with cardboard. You can go to the store, buy some boxes, draw designs up, and cut them out. You can even give them safety scissors and just let them do it with cheap posterboard or something.
Again, it's not really that exciting. It's a very minimal amount of assembly attached to what looks like a boring game. It's not bad, but for that price, you can get one of those cool fucking robot kits, where you build the robot however you like and control it with a remote controller, then you can dismantle it and build yourself a different robot. Hell, if you want to stick with assembly cardboard things, that pinbox kikestarter thing looks way better for cheaper. The cardboard toys are just interfacing devices. The bottleneck to the creativity is the software. Knowing nintendo they're not going to allow homebrew for fear of exploits so you'll have to play using whatever limitations the devs have decided for you.
One thing about it that is neat is the way Nintendo is showing off applications for built in gyro and IR so any smart dev could take inspiration and design cheap peripherals for their own game at very little cost which can be huge when you account for manufacturing and RD.

Cardboard, especially this type of cardboard, is a very common prototyping tool for pretty much any design based work. It's way more likely that they had a bunch of things made out of cardboard as they were testing out alternate controllers to the Switch and just thought to release those instead of stupidly expensive hardware for a one off games.
Depending on the availability of the scripts used to use these models as inputs to be used by external developers for full fledged games it might actually be a good idea.

lego has a really insane quality control to make sure the pieces fit perfectly even with old sets. i have sets from the 80s and 90s that i played with as a kid, and they still snap on with brand new pieces. also the bricks have all kept their colors.
