The thing I love most about the bosses in SotC was that all the cool stuff was happening in real time. The climbing, the stabbing, the horseback riding, all of it tbh. Like when that bird swoops down and you hop aboard in real time, it didn't happen in a "quicktime event" or a "cutscene". The game didn't momentarily take away control in order to show some cool happening onscreen. No. Instead, it happened while you Still had control over your character, making the gameplay all the more impressive.
Another cool boss battle was the Koloktos fight in Skyward Sword. There, he drops a massive sword that you pick up and systematically cut off his legs, arms, and slash at his heart. There wasn't a "mash A quickly!" button prompt as you did it, and certainly no cutscene either. It happened in real time and was playable all the way through.
Ever since quicktime events and cutscenes got popularized, they began substituting the actual gameplay in order to be more cinematic in their boss fights. Making the cool moments feel more "passive" than interactive, if you get what I mean.
I don't mind it, but I would still prefer it if I actually felt more involved during these moments.
