I'd say the stamina management is about where the similarities end. Souls games are as much about level design and exploration as they are about survival, playing cautiously, and being aware of your surroundings.

Monster Hunter is all about learning patterns, timing, and tells through getting your ass knocked around. Even the whole idea of "slow" weapons that you have to commit to isn't entirely true unless you're playing Greatsword, and even with that being the slowest weapon in the game, you can still dodge-cancel and block-cancel in and out of combos. Certain weapons are actually only truly effective if you understand how to abuse their combo system to get a constant chain going. Like gunlancing with a constant cycle of poking, shelling, side-sliding, lunging, and slamming to get way more damage until you knock the monster flat on it's ass and blow your load in its face.
