The Togruta head-tails seem to be more vulnerable from the front. I think The Force Unleashed fight on Felucia is the only time they're shown being tied back to keep them out of the way. That fight also shows that the Montrals do get in the way, as Shaak Ti has to dip her head back slightly when doing an overhead lightsaber spin.

I think that depends on your class, also of note is that you can just buy the Twi'lek Legacy unlock on their little store for a pretty cheap price and then you can play as a Twi'lek no matter what class or side you pick. Also worth noting that you could always go with the Star Wars Galaxies emulator servers. You can most certainly be a Twi'lek in those. Another suggestion is you could get in to the Star Wars tabletop Role Playing Games since they let you play as a Twi'lek (in fact fun note; Twi'leks were originally first named by the original Star Wars tabletop RPG, often called Star Wars d6).

I remember seeing a fanon site that gave specific names like Lethan and Rutian to the other twi'lek colors like purple, yellow and green. As for official materials (both nucanon and legends) there's not much information beyond the implication that color is heritable, although it seems to come from either one parent or the other instead of blending evenly.
Another thing I noticed is the the way the lekku attach to the skull can vary. Some are more towards the back of the skull while others are closer to the top, and they can either be close together to give a cleavage-like effect, or sticking out to the sides. Then there are weird images like OP's where the skull is xenomorph-long and the lekku are coming straight out of the sides.
