disney's "canon" is the movies, cgi tv shows and anything released post 2012, for the most part. apparently they're backpedaling now and saying that some things aren't canon, like that anthology book a certain point of view, or the novelizations of the movies, because they're based on earlier drafts of screenplays and scenes in them aren't in the movies (even though this was never the case before, the novelizations were always considered canon as they were a more complete form of the movies).

No one fucking knows. Technically not, I guess, mentioning the Mandalorian Wars just means that there was an event called the Mandalorian Wars at some point in the past.

For example, Delta Squad is still canon since they appeared in the Clone Wars, but Republic Commando never happened as far as we know.
