Specifically I've been looking to find more surplus pants camo or not with elastic ankle bracelets whatever you'd like to call them. The only pants I've been able to find like that are these:

The problem with surplus stores is the moment people start to discover it the milsurp stock just fucking goes. used to have a really nice store in my town but they improved the site design for online purchases and then all the good shit disappeared. you can see it happening on varusteleka where they're slowly transfering to new production items as they go on.

my local store, i think they ship overseas same as varus but i have no idea. all they have is soldier 95 and MTP, they even ran out of genuine surplus pullovers.

This. Anything of use or even possible worth disappears straight away unless it's stupidly overpriced.

Ease of access kills milsurp because you have vultures, myself included, watching for new arrivals with very limited quantities t. undergeared urbanite with plans to flee the city soon. Thankfully Varusteleka has a stable amount of obsolescent milsurp that's both fairly useful fallback material and not collectible, so they should be a good source for the foreseeable future.
