and a full set of level 3+ plate armor.

There's no such thing as too much ammo unless you're on fire or underwater. That said I like to keep at least a case per gun, except for obscure calibers.

Depends on a lot of factors. Depending on how it's loaded it might be good two centuries from now, or it might be a dud in a few years. I've shot WW1 vintage .30-06' and 8mm Mauser, turn of the century .30-30 and 7.62x54r, and 1890's vintage .32 S&W Which was some of the most accurate ammo I've ever shot out of my Nagant to be honest. Left me wishing I'd saved a few rounds for a rainy day.

If you keep it out of direct sunlight, keep it dry, and keep it as airtight as possible (or at least with a couple dessicant packs) your ammo can stay good for decades or even centuries. If you keep it in a humid environment and expose it to the elements, it might only last two or so years.

Enough is more than you have within your practicality. I personally like to find a round that will do it all for my purposes for a given gun and then stock at least a case of it.

Having close to 10k rounds for your primary weapon should be OK for serious shortages of ammo for whatever reason. It certainly doesn't hurt to keep training with it and keep cycling your oldest ammo first, buying new ammo as you need.
Part of the mentality of people who live in disaster zones is preparing for the next inevitable disaster, like third worlders who have monsoons every year. You can't really say you've done enough.
