I'm no scholar, but here's a few:

The Quran is an instruction book for Muslims, but it's also the story of it's own revelation. It's not a book that popped into existence, rather it's a series of revelations that happened over decades.
2:190 was revealed during a time of war, so that the Muslims do something about it instead of not fighting and hoping God does something about it.
Read on and you'll find 2:192: "And if they cease, then indeed, Allah is Forgiving and Merciful

If it wasn't relevant to Islam it wouldn't be in the Quran. Scholars have always taken it to apply to Islam.

That rule was brought in for a time because pagans would pretend to be Muslim to get close to camp and steal intel and resources. It's a treason law, not an apostacy law.
When you die you're religion is locked. If you kill someone who could have rejoined Islam you've condemned them to hell, and since murder is a big sin you've probably ruined your chances too.
