That's why I said you need the right resources. I think a lot of the reasons you end up with nightmare fuel stuff is because you think "oh, I'll just jump in and learn from experience" and never taking the time to track down videos or tutorials that teach you the foundational knowledge of the craft you want to master to build upon. Of course, finding the right resources can be a challenge in and of itself.
I would imagine making a plushie would be difficult though, but probably no harder than gitting proficient at drawing or sculpting...

The “why” could be a good number of reasons, personally I think for most people it’s a fear to start, sort of like putting a pencil to blank paper or having a block of clay set in front of you. They may not “want” to, but like I said, if you like them that much I think it’s at least worth giving a go to see if it’s something you’re interested in...plus the big reason is I think a creative hobby of some sort is good for people. A little time creating something a day can do some good for the soul. It’s relaxing and can be pretty satisfying.

Well, see that's the thing. Everyone should be doing this. Even if your labor were only worth $10/hr, if the damn plush takes you 20 hours to make, factoring in all the lessons and practice, then it's cost you $200 anyway. Thing is, after that small amount of time, there is no way it's going to be as good as something you can buy for that price.

But you are factoring the potential therapeutic nature as well as the knowledge and profitability of the hobby. Say you give it a try and end up enjoying the craft, you set a quality goal to avoid nightmare fuel and after a few go’s at it(with tutorials/books/videos as reference) not only are you able to make your own plushies at that point but turn around and sell some for that same $200 you could then use to buy somebody else’s you like. It may take a while to git gud so devote a little time to it a day if you find it being something you enjoy.
And again, this all comes back to how much you like plushies and if you actually end up enjoying the craft, but I’d say there are people in this thread who should give it a go.

Assuming you've never made a plushie from scratch before, how many plushies would you need to make as PRACTICE before you reach a level of skill to make a complex and flawless one like >>62037 >>62047 >>62085 >>62087 ? At least a hundred, right? Even with "the right resources" you agree that it would take a lot of PRACTICE, right? Maybe at the absolute best, if "the right resources" are practically magic beaming the skill into your brain, it might only take fifty or sixty failures before one success. And when you're making the first ten or twenty plushies of your life, you're just learning the fundamentals, the baby steps, you wouldn't even attempt to make a Lucario or Flamedramon plushie, that's too complex, too many different parts that need to be exact and you do not have that level of skill yet.
Each and every one of those practice plushies you make is a TRY, it is a SHOT, with a distinct beginning and a distinct end. You will almost certainly throw them away because they are flawed and worthless, you don't want to make them so you can have them, you just make them as a learning exercise.
When you say "give it a try" or "give it a shot" you are implying ONE TRY, as if anyone starting from zero skill, even with "the right resources", could hope to match the quality of a professional on the first try.
If you say "give it a try" when you actually mean "give it as many tries as it takes to reach that level of skill", then of course most people aren't willing to do that.
