I cook, I used to do it for a living :3 Since it's the weekend now I get to spend extra time making breakfast and stuff, which is nice. Normally I just get something quick, but when I have an hour or so to devote, I use it.
Like, there's a spread I make for bagels or toast, leads of flavor and texture to it. I like to start with making some aioli. Apparently if you buy it in like the UK it's literally just mayonnaise with garlic lol. But I like to start it out like mayonnaise, that is, whipping an egg yolk while adding in half a cup of oil a few drops at a time, with garlic ofc, but I also put in a bit of Dijon mustard for some spice. Takes around ten minutes to get the consistent perfect. Then I'll mash chickpeas down into a paste and mix in a couple tablespoons of the aioli to give it a smooth texture, and a tablespoon of sweet relish to kind of level out the Dijon and garlic, plus I like a bit of crunch. Otherwise I'm a big yogurt guy, gotta have those pro-biotics (sauerkraut is a good cultured food I can make at home easily), but the rest of breakfast is mainly fruits and what all, though a glass of homemade almond milk doesn't go amiss. When you make almond milk at home, the ground up almond pulp you squeeze the milk from can be baked into a nice yogurt topping btw.
