I personally wouldn't take them out entirely, I'd just change them up so they aren't obnoxious. They actually worked as a great coping mechanism for Quasimodo's psyche and added an interesting layer to his character. The one scene where they said "We're just made of stone, we just hoped you were made of something stronger" was seriously deep. The comic relief they provided was still incredibly forced and cringey, though. And they should never have fought in the battle of Notre Dame, that's just idiotic.

You could probably drastically improve the film with simply changing some of their lines. The gargoyles had to be an executive decision, since I feel anyone with a sound mind would feel a lot of their lines were out of place.
