anything, really. if you don't want to spend time and you like canned seafood, you could toss in smoked oysters or sardines. if that's gross to you,it's not to everybody's taste, use a few slices from a decent sandwich salami. cut avocado into chunks and drop it on top. carbonara is so simple it's practically made to customize to your own preferences.

Add a can of white beans in tomato sauce. That'll really bring out the personality, along with some freshly grated ginger and some chopped coriander. Seriously though: I have no idea why you'd want to add more crap to a dish that's already perfect.

Sure, you could replace the guanciale with prosciutto and zucchini, you could add chopped chives, and/or a bit of chili. But that's just a waste of time and effort, really.
