my hens are laying eggs at a rate that I can't keep up with.

ITT post how you use eggs as ingredients and egg related dishes.

 No.6692

For your case I would recommend frying your eggs to go with each meal.

Fried eggs can go great on top of a lot of things. Salads, burritos, whatever.

THE FLUFFY OMELETTE IS BACK!!! >>6043

This time I've improved the flavour by adding sour cream to the yolk mixture and serving it with tomato sauce!

Feedback on picture? I'm building a restaurant menu so any garnishing/presentation ideas/tips would be appreciated. I was thinking some Italian parsley and tomato sauce, but where would I put the tomato sauce?

try traditional french macarons. your first few batches are bound to not turn out quite right, so having a good supply of fresh eggs is a must.

also, souffle, custards, curds, poached, boiled, fried, scrambled, egg-drop soups, egg yolk ravioli, fresh pasta, meringue, raw on a steak tare-tare

it's probably the most versatile ingredient ever used. in the traditional french chef's hat, each fold is said to represent another way the chef should be able to prepare the egg.

honestly, if Bubba from Forest Gump had been a chicken farmer instead of a shrimp fisherman, this scene would have lasted the whole movie.

try putting the plate next to an open window that isn't letting sunlight in directly.

it will give you a nice color temp and soft shadows.

pic related is an example of when i made a tiny glob of butter just to try it.

>try putting the plate next to an open window that isn't letting sunlight in directly.

In the northern hemisphere, that would be a north facing window, ideally on an overcast (cloudy) day.

Back when I was doing photography, we referred to this as "the world's biggest softbox".

As for making the fluffy omelettes look better, quit scorching them. Minimize that maillard reaction; some of us don't want to be thinking of a tough crust on the egg-puffs.

 No.6727

Aside from regular egg recipes (poached, fried, boiled, etc) I can think of:

-Spanish Omelet. Just stir the eggs, put it on a pan, add some chorizo and julienne-cut potatoes, then flip it and cook the other side

-Egg salad

-Cakes, pastries, hot cakes, all that stuff that goes with flour

-You won't use that much at all, but egg whites are good at gluing ceramic together if it broke down

If you have too many to cook, try a few of these:

HAIR PRODUCT

>Whip 1egg and 1/2tsp scented oil into a frothy mix

>Rub into hair like conditioner

>Let sit 15-20 minutes

>Rinse thoroughly

>Repeat once per week

This will give your hair more luster and volume.

DOG FOOD

>Scramble eggs without oil or seasoning

>Let cool

>Mix into dog food

Your dog's coat will be smoother, thicker and shinier due to the extra protein. You can use this as a reward treat.

LEATHER CLEANER

>Separate whites from yolks

>Rub whites into dirty leather

>let stand for 5-10 seconds

>Wipe with damp cloth

The proteins in the whites bond with dirt and oil very well, and help moisturize the leather.

SILVER CLEANING

>Hard boil eggs

>Place yolks in a sealable container

>Mash yolks into pea sized lumps

>place wire rack over eggs

>Place silver on rack

>Seal container

>Let sit for 6+ hours, depending on desired level of oxidation

>Open in well ventilated area

>Wash silver with soap and water

This will oxidize silver objects much like a conventional cleaner due to the sulfur in the yolks.

FOOD PAINT

>Mix egg yolk with 1/2tsp water and desired amount of food coloring

>Brush mixture onto paint recipient before baking

Baking at 350°F for 5 minutes is usually sufficient, but your mileage may vary, depending on what you're painting.

PLANT FOOD

>Grind egg shells into a powder

>Mix into soil

You can also compost, but the powdered shells are good for plants on their own too.

GARDEN DEFENSE

Vs cats:

>Partially crush egg shells into 1/4inch pieces

>Spread evenly across dirt

>Cats are now unwilling to walk across dirt to scratch out a poop hole or chew plants

Vs slugs/snails:

>Crush egg shells into fine powder

>Form a ring around plants

>Slugs/snails are hurt by sharp egg shells and cannot cross

Vs hail/harsh sun:

>Cut shells into halves

>Place shells over plant buds to shield them

>Secure with tape/rubber bands/paperclips

>Egg shells take the brunt of the damage

Vs Deceptions:

>Break egg shells into appropriately shaped pieces as needed

>Use glue to form egg shells into a sculpture of Optimize Prime

>Paint

>Deceptions are unwilling to approach your garden out of fear of angering Optimus

Vs Ants:

>Cut egg shell in half

>Grind white rice into fine powder

>Partially fill egg shell with powdered rice

>Place egg shell firmly over anthill opening to keep the rice in place and protect it from other animals

>Ants will find the powdered rice, attempt to bring this food into their hill while digging to clear the hole, eat the rice, and die when it expands in their digestive tract

So how HEALTHY eggs are exactly? Your average chicken eggs obviously.

Since this thread i thought i'd start eating them again mostly as omelettes or boiled but a good omelette requires atleast 3eggs and it's kinda conflicting on the studies mostly about the yolk and it's healthiness and how many eggs one should eat daily/weekly at most.

Last week i made omelette twice and used total of 8eggs and im not gonna throw the yolk in the trash because i hate wasting food.

 No.6911

>>6910

I usually make a 2 egg omelette and roll it up in a tortilla.

Are eggs bad for you? Well, too much of anything isn't good for you. Balance and variety.

 No.6912

>>6910

yolk has fat in it, but it's not enough to offset the benefits you get from the proteins and vitamins, unless of course you are eating way too many.

and of course, if you're doing it for your health, boiled or poached is better than anything that involves adding fat, like omelets, scrambled, or fried eggs.

 No.6916

>>6910

Eggs are very healthy, don't be scared of eating yolks please.

However, just because they're healthy, that does not mean "eat a shit ton because it's good for you". Eating a shit ton of anything is unhealthy. Normal people don't put more than 2-3 eggs in an omelette.

Eating small portions = healthy.

Eating large portions and/or like a pig = not healthy, no matter what you're eating.

 No.6917

I think i'l lower my eggs to 2-3 in omelette, the 4 was bit too much and maybe 6eggs a week or so~.

I mostly started eating them again because eggs are pretty damn cheap even the quality ones not from chickens in cages and a good replacement for the more expensive meat as a source of protein.

omlettes are very quick to make as well if you want post workout protein

 No.7035

I'm going to suggest you make your own pasta (a nice egg based pasta) and some lovely carbonara sauce to go over the top of it.

Both will use a ridiculous amount of eggs.

You need to use more eggs, time to make some ice cream for dessert.

That, or learn how to preserve them (I seem to recall something about a wash and then quick coating of mineral oil), or sell them to your neighbors. The easiest way is surely to get more people to try and eat the eggs; selling them to the neighbors readily accomplishes this.

now that the summer heat has hit us the chickens have slowed production to the point where some days there are no eggs at all.

I dont want to force molt them or do anything to stress their system and subsequently reduce their egg laying life (because once thats done they become stew)

trying to think of ways to mitigate.

suggestions?

>bring shredded cheddar cheese out to warm as you work

>crack 2 eggs in frying pan

>pan's coated in butter (not too much)

>bust yolk and add black pepper

>fry it hard; add Worcestershire sauce and poppy seeds as it cooks

>bring to plate and keep egg in microwave or warming box

>take frying pan and dice up spam or real breakfast meats

>fry up meat in leftover butter and egg residues

>bring meat to bowl of cheese and toss; dust result with generous amount of chili powder

>bring egg out of warming thing and dump meat and cheese onto egg

>serve hot with OJ

>or milk if you're training for heat

 No.7926

>>7924

>there's nothing spicy in that recipe.

worcestershire sauce has enough spice in it to make it spicy. As does black pepper and chili powder.

Otherwise, you are absolutely right about cooking the meat first and letting it rest, and then topping it with the egg.

op, this takes a bit of effort, but if you have a vacuum sealer and sous vide equipment, you can:

crack a bunch of eggs into a bowl and mash them up to make the liquidity mixture (no cooking has occurred at this point)

pour the mixture into ice cube trays and let them freeze

once frozen, put the cubes into vacuum bags and seal them (I'd say about 6-8 cubes is a decent serving for one), toss the newly sealed bags back into the freezer

when needed, grab a bag out of the freezer, drop into the sous vide water bath and cook at the required time/temp

and you have scramby eggs whenever you want
