I've taken up an RP personal challenge and made my character illiterate so she doesn't read books and can't learn spells; now she's basically a filthy forsworn cannibal, and with mods like RealisticNeeds I get her blackout drunk all the time, stumbling around bashing skulls and pissing everyone off.
She's homeless, disgusting, and doesn't follow the main quest at all. All the NPCs hate her.
But don't fuck with her cause she will rek u. Shield bash in the face to stagger you, followed by a power swing from her war axe... and when you're dead, she'll eat your flesh.

alchemy can be incredibly OP.

Since Skyrim is such a hand-holdy game, despite being very content-rich and beautiful, I would recommend roleplaying your character to some degree as I did with mine, as an example making her illiterate and playing without any use of magic or reading any books in game *(aside from any quest related things I obviously had to open)
So, you could give yourself a likewise challenge and figure your way through it... when I played Oblivion I was a Breton Conjurer born under Atronach so I had +200 magicka but no natural magicka regeneration - so I turned to alchemy in order to replenish myself, and the limitation was very tricky, especially when that 'gas tank' was nearly empty.. and my char had very poor combat skills, and aside from sneaking around and poisoning people with daggers, had to rely on summoning powerful atronachs or dremora.

The point, for me right now, is that it's filler.
I can dick around in Skyrim with my cannibal and milk a little bit of game out of it and explore places I haven't been to- while also remembering some places I have, years ago. It's a combination of reflecting on my first playthrough that I didn't finish (but seriously, archery is so OP and with all the shouts I was basically God and it got boring super fast) and challenging myself a little bit the second time around..
and really, it's still entertaining, and just buggy enough to make me laugh as well. I saw a duck walking underwater. I got shot right through the face with an ice bolt.
I heard a voice while I was in a dungeon and turned around and there was a vampire thrall right behind me; I instinctively attacked and it went into cinematic and I one-hit killed him.. while he delivered a one-liner insult. Bitch, you dead though.

Well, if the challenge is like, 5,000 slow moving undead who are coded to come after me, and all I have are some limited-ammo weapons, I would justifiably attempt to find some higher ground.. within the game's rules, I would devise a way to 'win' the game.
