Rebuilds 1.0 and 2.0 are largely NGE rerecordings with some original tracks, while 3.0 is a mix of Nadia tracks and original stuff.

The first one was just generic and boring.
The second one attempted something new at least, even if that was making the female characters members of Shinji's harem and having them cook off to win his love.
The third one tried to do a lot but failed for the most part. There was some good stuff there but too much was just random anime gibberish that wasn't properly explained. Even the autistic wiki doesn't have all the answers for this one.
It doesn't undermine the original series for me though because they're so far apart in terms of when they were released, and also because the rebuilds are sequels so it doesn't actually affect the original like a prequel or remake would.
