Because at this point the Isekai fantasy isn't even "another world." It's "trapped in a video game" but with enough of an excuse that it's real and you don't have to worry about the underlying horror of being trapped in a fake world.. At this point they all add adventurer guilds (with ranks included), resurrection, and/or straight up STATS that the characters can view and tell they're better than before. The main reason I can enjoy Overlord and Log Horizon is their unabashed admittance of it being "Stuck in a video game" instead of pretending otherwise.

Drifters is technically an isekai and has that, Oda Nobunaga teaches elves how to make gunpowder and uses Dwarves to mass produce muskets.
Nobunaga Concerto might've had something like that, MC is too lazy to even know who assassinated Nobunaga but he still has a modern perspective.
Youjo Senki, don't know about the LN but Tanya makes good use of modern knowledge, just not in technology.
Maoyuu Maou Yuusha has that "advanced technology introduced to medieval people at once" element but it's not an isekai, just fantasy.
Dr. Stone is technically not an isekai but you have cavemans reacting to a modern day genius inventing glass and antibiotics.

No idea, haven't read the manga. The show is worth trying out, at the least. If you're into history and/or Isekai stories it's a lot of fun. It's main issue is that it's comedy moments that it has to try and alleviate the amount of edge the show has are horribly unfunny. But the crew that worked on the Hellsing Ultimate OVAs are the same people that make this show, which for me was a selling point, and it also has one of the most badass openings of all time.
