At least in he LN, the way he wins against demon lords is through careful planning and picking out the best equipment for the job. The stuff he's wearing in that particular instance in his PVP gear, not his regular mob gear or his Demon Lord Slaying gear. Most Demon Lords in the game were infamous for having one-hit kill moves, so his Demon King gear actually consists of items that are a lot weaker/a lot more common, but have the benefit of being able to do things like make him invulnerable to all attacks for 5 seconds. It's stated that he'd usually lose against a Demon King about 1-5 times before finding a successful way to beat them after memorizing their movesets, and that was how he solo'd Demon Kings, otherwise he basically can't bear them ever.

They do. Basically he uses a mix of three tactics:

I think it also mentioned that certain magic can only be reflected so many times by Demon Kings, so he'd actually intentionally get hit by magic or cast his own magic and let said magic play ping pong back and forth until the Demon King's shield temporarily goes down and all the magic hits them at once. I know later on he does this to attempt combining two spells with opposite attributes by bouncing them back and forth between his hands, and it creates an explosion that damn near buries him under a ruin.
