Actually, what she really said was probably worse than the translation, which only speaks in general terms of fairness rather than in an almost legal sense. The other girl's lines don't help either, now I'm no expert in current social trends in Japan but, the fact that she says ジェンダ instead of soemthing like 性別 also implies it's based on western ideals. Though on the other hand the translation mentions 'lacking sensitvitity', which I suppose is a decent way of equating the line to English, but is pretty far off what she actually said:

"Certainly there was something about gender or that sort of thing that I phrased incorrectly."

(Bare in mind this isn't a good translation either since I didn't bother trying to make it sound like actual human beings talking to each other, but it's a bit closer to what they actually said.)
Frankly, I'm more than a little concerned to be seeing this make it into any anime at all, and as much as I'd like to think she's just making an excuse to hide that she wants the 豆, the fact that a pair of 2D JK would be immediately aware of and quick to mention such issues is worrying, whether spoken in earnest or not.

Update, haven't found raws yet but the anime staff clearly messed with the script hugely, this scene plays out completely differently with only blue apologizing.
So this is how anime dies, not with a pretentious Miyazaki/Anno collaboration, but with a 5 minute format junk adaptation.

Yuri's been a thing forever, and while I tend to prefer when it's never considered noteworthy or remarked on as unusual by the characters, "girls can't love girls" is hardly new either.

I prefer the anime's version. The manga gives Kouhai a more defiant tone, and it puts more emphasis on society's norms, while in the anime it's about freedom and societal expectations aren't mentioned. The sense I got from the anime was that Kouhai reacted the way she did because she was distressed by the Senpai she liked casually dismissing her without knowing.

No one here has the slightest issue with yuri. The issue is with ジェンダ, i.e. explicitly using gender as a loan word, and further, the anime staff rewriting the original script solely to include the word 'gender'. It's one thing for an author to be making refernces to western social justice concepts, it's another for an author's vision to be altered in order to fit foreign social justice concepts in.
Additionally, when have you ever seen a girl say not just 'girls can love girls', but imply that it's a violation of human rights and basic liberties to even suggest that girls can't love girls?

They've skipped a few chapters. The yuri couple had a followup in chapter 4.
In fact, out of the five chapters translated so far (1,3,4,5,7) only 1 (yuri) and 5 (sensei) have been directly adapted, plus 7 (poet) which was so different I'm not sure it's actually the same chapter, rather than a different chapter of the same girl.

Agreed. Every single other arc in the manga is better than this gay shit. It was especially unsuited to start and finish the series with it. They should have left the old man's story for the final two episodes, and do the story about the big guy and the shorty in the rain to fill the gap.
