The appeal comes from when the dere comes out. It's kind of a gap moe effect where a girl who acts like bitch most of the time shows that affectionate and earnest side. It's just that I don't think most people who write tsunderes remember to include that last part.

There's two main types; those who are constantly bitchy but are then occasionally and momentarily overwhelmed by their affections, and those who start out hostile and bitchy but soften and turn loving and kind.

In the former, the only appeal I've understood is the breaking fantasy. You know; dick them so hard they can't help it any more.

In the latter, it's the same but through less over methods. The main character has to overcome and gain their respect, until they can't help but fall for the mc. I would argue both stem from the same source; of several thousand years of men struggling with being judged by 3d women and overcoming them.

I think tsundere are usually pretty shit but the one tsundere I really like is Tohsaka Rin. She's just the right amounts of tsun that it feels like normal behavior a well adjusted person could have, without going overboard with it like most tsunderes go. And when she goes into dere she doesn't go full dere either, she also deals with it pretty well.

A good, mild tsundere character that can be good for you if you're not that into the archetype. Maybe similar to a milder wine or weaker coffee anyone could drink and enjoy (not that mild means low quality, mind you).
