Yeah that is the main problem with this series.
So far it's been mind battles, kids in a situation trying to use their above-average brains to figure out a way to use the rather mundane means at their disposal to achieve a pretty mundane goal (escape the farm).
But the larger plot includes non-mundane elements like demons who eat people's brains. The trying to outwit Mama thing worked, because of the particular circumstances the kids were in. Those aren't going to exist in the wider world outside.
If the demons capture the kids and put them in a demon jail, it's not like they're going to let the kids roam around freely to plot an escape. In fact the kids can't do anything against the demons at all.
Maybe the kids meet up with some human organization, who fight the demons. But what would the organization do with the kids, besides protect them? Employ them? To do what?
Now a lot of the stuff with the kids trying to outwit mama was a lot like espionage. The kids could get conscripted to work as spies, and sent to infiltrate organizations affiliated with the demons. But would they really send kids to do that?
Another way the author could keep the story going is to give the kids magic powers. Which I hope doesn't happen, but it might not be so bad if the powers are the kind that require lots of trickery/thought to use.
So we wind up with the kids and demons weaving plots and trying to exploit the rules that govern their powers to upset each others' plans. The mind-battle thing could be kept working that way.
The powers and the espionage angle could be made to work together as well. I actually see some potential in that. But really I never know where they're going with this series. It's one of the few weekly manga I'm reading weekly because I always want to know what happens next and am always surprised.

It really doesn't. That's very interesting, and I'm upset at myself for having not noticed it. Near as I can tell, that's some kind of temperate deciduous forest, so during winter they should be bare of leaves even if they're in a climate that is fairly warm (Florida?).
This could indicate several possibilities. They could be in the southern hemisphere (though in chapter 5, the kids deduced from the movement of the sun that they are in the northern hemisphere), or they could be in some kind of controlled climate (giant biodome or advanced future with weather-controlling machines and an artificial Sun), or they could just be on a planet that IS NOT EARTH, so the rules are different.

To maintain that, one would assume that either: 1) The demons don't really know much of the history of the world anyway, or 2) They're going to hide the truth or outright lie to the kids.

That's a really good reason actually. Religion can be a powerful thing. It's an explanation that sits better with me than just "Oh we're allies of humans and part of an anti-demon resistance, human power!", which is what I was expecting. There's room for exploring that too, like maybe later a demon who's supposedly religious shows up and they're already very trusting of these nice demons and then the guy goes and tries to eat them because he's curious and not that religious or whatever.
I do agree that the next chapter will definitely be an info dump. I'm not too happy with it but we all knew it was coming eventually, maybe from Minerva, maybe from some book they find, but instead we're getting it from demons themselves.

Well, nothing much about Minerva, but we can assume a lot about him as a character by the surroundings and logic.
Right off the bat we could assume that Minerva is the one who gives the Demons their equipment, as it would answer the question of how did Minerva's shit get into the farms.
His base isn't that far out from the farm, but still far enough for any sort of expansion.
There are numbers on the cell, but not on the man's door, whose door is free of any sort of mark, like a janitor's closet or office in a hotel.
The things that don't add up, is if that man is Minerva, why is his computer monitors dated, he has no pen, merely a quill, his shoes bottoms have shitty wear-and-tear (which could suggest an active travel life-style, so it could fit Minerva's character anyway.), his teacup is also broken, which suggests the inability to get a replacement. He also has one glove, which is strange.
All of this could be just aesthetic choices, of course.
Maybe this is Minerva, but past his 'prime'? He does have white streaks in his hair, so he could be middle aged, a classic 'older-than-he-looks.' It would also fit in with his surroundings, as everything around him is dated, including his clothes.

It makes me wonder about the origin of these "demons", and if they were engineered as intentionally anti-human organisms. Like some kind of ploy to save the Earth from humans ala True Ancestors or Parasytes. But all the novel flora and fauna would seem to contradict that. Unless the demons were a creation of a mad scientist, or sorcerer or something, who wanted to use them to conquer humanity. Maybe Unpronounceable created the demons specifically to fight humans.
