So basically in the Tor browser I've configured the Torrc to excluded the Five eyes plus some other awful countries with a strict policy and since this morning I can't browser onions except if I configure StrictNodes to 0. Does anyone has a similar problem ?

With the exception of Russia, you've excluded most of the countries where people are operating Tor relays and exits. It's unsurprising that you'll occasionally experience problems.

Also, I find this FVEY snake oil hilarious. FVEY members at least have nominal restrictions on operations in their own countries. They operate with impunity elsewhere. NSA/GCHQ totally pwned Belgium's network infrastructure a while back, for example, but you don't exclude Belgium. Snake oil.

I suspect that routing your traffic through a small set of countries also makes traffic analysis of your traffic easier.

I suppose that putting it to 1 enables hardware acceleration but by doing so there might be new data that can be used to fingerprint your hardware.

That's bullshit FBI, GHCQ, DGSI and other acronym agencies are over the law, just at the end/beginning of 2017/2018 in France the DGSI raided tons of Tor server that's why there's only one Entry guard left in France.
