On this topic though, I wonder how hard it would be for me to get a real system administration job. I've maintained dedicated servers for a company for free and after that I have also administered my own vps for a couple of years. I've used GNU/Linux for nearing a decade so I feel like I should be fairly competent in that area. How much more would I need to learn?

Nowadays everyone wants to hire 25 year olds with a masters degree (preferably with a related masters, but just any random degree always trumps no degree) and at least 3 to 5 years of commercial professional experience. The further a candidate is from this ideal the less likely he is to be hired. Many HR departments insist on hiring exclusively such ideal candidates (or those who successfully fake to be such ideal candidates) and will rather look for them for months or even years on end rather than hiring someone who doesn't meet their rigid requirements.
