I use Signal with people who want to communicate with me. I don't think it's too much too ask for, and I'm happy to eyplain my reasoning to anyone, but I've still had people uninstall it because they told me "they had too many apps and everybody uses WhatsApp anyway".
For those people I fall back on unencrypted E-Mail and SMS, but I'm torn on the question of installing an obvious data-gathering scheme by Facebook.
I would probably be okay with WhatsApp, if there was a way to contain it to a certain subset of contacts, instead of uploading all of them.
A bigger issue than encrypted messages themselves though is that most people use cloud backup options by default, not realizing the extent of data they hand over to Google and Apple, which defeats the purpose of encrypted messaging in the first place.
