Older books usually have that style of writing and it can be a slog to finish. Heart of Darkness took me a while to read because the damn book would describe every detail of the environment and the people abroad the boat.

Unfortunately books follow trends and as you stated. the current trend is downwards. A good example is Fifety Shades of Grey selling millions of copies despite being a horribly written fan fic of a horribly written fetish book. So, thus, the trend is to write horribly written fetish books. I highly recommend going back past Post-Modernism and just reading modernist era fiction and non-fiction. Though, you might like Star-ship Troopers.

Academic papers have stayed roughly the same.
They have to follow a format depending on the research paper. If I'm writing a dissertation then I have a rather sizable review board (predictably) want changes and critic my paper and this is all to make sure that my paper in legible enough for a international community. If I'm writing a research paper then I have to write in APA format so I can give a synopsis of my research paper at the beginning and then give an in-depth analysis of my research while referencing other sources to back my evidence. These styles were all deciding by an academic society that wanted one style of paper over the thousands that were presented to them. If you're curious, google Emile Durkhiem, he pioneered research papers and sociological papers to the main world.
