Well, N64 runs on a 4:3 ratio so you would want something that is more square than wide.
I don't think it really matters so it's personal opinion if you don't mind a slightly stretched picture.
As for quality N64 wasn't made to be shown on high resolution screens. So if you play on an LCD it's going to look jagged as hell and a lot of the image might look distorted. So any game that has small details are going to look awful.
SCART only works on modded consoles. N64 is RGB.
