First off, hiragana were based off of Chinese words in the first place, they are just incredibly modified but the basis is still there, you wouldn't have Hiragana
Second, the Japanese language has such a limited syllable pool that many many words are homonyms, in fact it's so chock full of them that live shows need subtitles so that people can tell what fucking words they're using. In addition the writing system would have to expand considerable. Previous words that could be handled in one space on a sheet of paper would need to be expanded to 3 extra spaces taken up for each, individual, hiragana.
The Japanese language is so interconnectedly fucked up that there is literally no way to remove kanji without restructuring the entire language entirely.
