I've recently started making iced mint sweet tea with mint that's been growing growing around my house. I wash and tear up about 20 leaves and boil 4 cups of water and put the mint in the boiled water. Then I add a cup of sugar into the mix and reheat to a near boil. Then I let that mixture cool and let the mint leaves sit in the water for the entire time it's cooling so that all the flavor can be extracted. Once this cools I remove the leaves and this base into a gallon container and fill it up with cold water and chill it all.
Then I have a nice mildly sweet minty drink that's perfect to take out of the fridge and have. A cup of sugar sounds like a lot but when it's diluted into a gallon of water it really it's only mildly sweet.

Vanilla is a bit more complicated than other herbs because it's a bean, so you'll have to set up a trellis to support it. Also you'll want to start growing already bloomed vanilla since it takes a few years to grow to that point from a seed. But from there it's about as hard as any other bean to grow. So I guess it depends on your gardening level of skill. But honestly it's not overly hard. You'd want to set up like a planter though instead of growing it in straight soil. As I've found with normal beans that's a bit easier to set up a trellis support system and have everything nice and contained.
