Start with Fate Stay/Night. If you have the hours to play the VN then do that first but otherwise just start with the anime, bearing in mind that it's pretty mediocre. After that you can watch Fate/Zero (prequel), then UBW (different route), then HF (final route. After that it doesn't really matter, they're all just spinoffs.
