I don't know scientifically, but crayfish and lobster look almost identical apart from the size difference. The only disgusting part is people who eat the (interior of) the head/body.

Nice thing about crustaceans , particularly, shrimp, crab, crayfish and lobster, is that you can clean off the shells and most of the organ parts and what you are left with is almost pure muscle. I won't eat mollusks (clams, oysters, muscles, scallops, snails) personally because it's all mixed organ meat.

Crustaceans are basically objectively better to eat than insects in that as you said they have big chunks of muscle with no organs. Insects carry a shit ton of parasites and bacteria and you pretty much have to eat them whole.

The sea "bugs" like crabs and shrimp have more meat to them, and generally don't carry much disease. Crabs are carnivorous, shrimp are omnivores and eat very small bits of organic matter, plenty is present since the sea is full of life.

Bugs on the ground literally eat shit. They're scavengers if not predators and the food they get is generally in the shit range due to comparitive scarcity. Sea "bugs" filter feed for plankton, land bugs search for shit to eat, which includes feces.

The worst that the sea animals have to worry about is us polluting it, since some fish and such can become tainted with mercury or other poisons. Eating bugs is a great way to catch diseases.

Regardless of Dawkin's weird cannibalism thing, cultured meat seriously interests me. I've been following it for a few years.

The main guys behind all of it, Mosa Meat, have some interesting arguments to make. It's significantly less resource intensive, can be modified for any preference, they can have vitamins added or removed and can it even be crossed with other animals. You could technically made a meat/plant hybrid if you wanted. They're planning to put it on the market next year.

They tend not to talk about the moral aspect of not having to kill an animal as much as you'd think. It's more of a "cows are horribly inefficient meat machines" economic kind of thing.

The process isn't as weird and fucked up as you might think. Basically, they take tissue and fat cells from a living animal and give those cells the nutrients to grow. By doing this, you can completely remove the animal's other biological processes and focus all the energy on just producing more meat. I believe it's something like 97% more efficient.

Venison is game meat, the texture and toughness comes from their lifestyle. Seals are pretty bland and the inuit only eat them because its the only reliable source of meat outside fish. The biggest problem is texture.

The texture is more like minced meat than muscle. The cells grow more or less like cancer; randomly in all directions.

There are certainly ways of growing cells into a muscle-like matrix, but that's quite expensive and it's currently mostly being developed for growing organs.

Protip: most animals don't actually eat that well, especially in a context where you're removing the environment completely. Land and water based environments is apples and oranges. You can taste the quality of water from all marine animals that you eat, bottom feeders included. When cutting a fish you cannot touch the stomach or its contents taints the taste of the meat, you have to be careful with how you prep the fish or the urine in the skin taints the meat with ammonia, etc. With land animals you have to be careful with things like scent glands, what they eat affecting things like the taste of the liver, etc.
